A Taste Like No Other - Vignoli Food Anthology

What's your business, and who are your customers?

In 2020, I founded Vignoli Italian Food Anthology, an agricultural company with the core business of producing extra virgin olive oil from four Italian regions – Tuscany, Puglia, Sicily, and Marche. Our extra virgin olive oil production is complemented by two balsamic vinegars of Modena IGP and an exclusive line of infused olive oils and vinegars (9 infused extra virgin olive oils and 6 infused balsamic vinegars).

We round out our portfolio with additional gourmet products, including egg pasta, vegetable tapenades, olives, ready-made sauces, and grilled vegetables preserved in extra virgin olive oil. Each artisanal product is inspired by the best traditions of the Italian table.

Our customer is a demanding, quality-conscious consumer looking for genuine Italian products of certified Italian origin. Thanks to our team of chefs and food technicians, every Vignoli product is rigorously prepared according to traditional Italian recipes under my direct guidance and supervision.

Tell us about yourself

I have been involved in the olive oil industry since 1996. I am a Mastro Frantoiano, meaning I have been recognized for my distinctive ability to manage the production of the most refined olive oils in every aspect of the process, from the olives to the bottle. I am also an Olive Oil Sommelier and have acted as a judge in many olive oil competitions.

I started as a technical and commercial consultant working alongside producers at all stages: from the olive harvest to its transformation into oil, from chemical and organoleptic analysis to the search for new packaging solutions and new opportunities and markets. I have traveled and continue to travel to all the countries where olive oil is produced. Throughout my professional career, I have tasted, evaluated, and collaborated in producing thousands of oils from around the world as Mastro Frantoiano and sommelier.

After years of experience helping others produce quality olive oils, I fostered the dream of doing it for myself. After all, I feel uniquely qualified to create an incredible product, and it is from this ambition that my new project was born. Vignoli Italian Food Anthology bears my name because I am proud to stake my reputation on it.

What's your biggest accomplishment as a business owner?

In the 25 years I have been in this industry, I have explored the world of olive oil from a 360-degree perspective.  I am proud to have helped many olive growers and olive oil producers, not only to achieve great quality results, but also to position themselves competitively in the global market. My greatest satisfaction today is that my project has been entirely self-financed and is the result of a long journey of hard work, study, dedication, and passion.

What's one of the hardest things that come with being a business owner?

It has been a challenge to build my company using only private funding without relying on external investment or crowdfunding. I preferred to forgo all those forms of raising economic resources that are common today, where the entrepreneur risks others' money instead of his own.

Another critical issue was approaching the North American market, which is distant from Italy in terms of quality standards and food consumption habits. Understanding my target customer required a great deal of study.

What are the top tips you'd give to anyone looking to start, run and grow a business today?

To those who are about to embark on a new business, I found inspiration in a famous quote from Elon Musk, said during the height of the pandemic: "Let's not make the mistake of underestimating ourselves just because we are coming from terrible years, let's not stop believing in ourselves and especially in our ideas, in our dreams. Let us invest in ourselves because others may not necessarily do so."

Second, when approaching a new market, consider all the many critical issues and don't underestimate the importance of precise and careful organization.

Third, remember that when you bring passion, dedication, commitment, and honesty to your work, sooner or later, you will reap the rewards!
