Interested in starting your own entrepreneurial journey in food and beverage but unsure what to expect? Then read up on our interview with Scott Williams, owner of Skyefire Bakery, located in Airdrie, AB, Canada.

What's your business, and who are your customers?

We are a traditional bakery in Airdrie, Alberta, excelling in sourdoughs and traditional rye breads. Our recipes are simple and of the highest standard. We have a selection of breads, buns, cookies, cupcakes, scones, and pretzels. Made with minimal ingredients and no additives.

Tell us about yourself

I have been a bread baker for over 20 years. I love baking. It is a process of love and nurturing. Some of our breads take up to 12 hours from start to finish. From just flour, water and salt, we can make a variety of breads with a variety of flavors. The simplicity which can create such complexity is an art form that I love. From my home kitchen to a full business, I need to share the fruit of my passion. This is why I have a bakery!

What's your biggest accomplishment as a business owner?

My accomplishments, I feel, are hard to rank as most important to least. That I have survived through the challenges of COVID lockdowns or that we were featured in a Food Network episode(Project Bakeover), I can't pinpoint one single achievement s the biggest. Though having someone gluten intolerant become a repeat customer, eating and enjoying my sourdough is nice!

What's one of the hardest things that come with being a business owner?

The biggest challenge of being a business owner is getting the right staff. I have trouble letting go of doing everything. I have to be in control. Having and getting the right staff means I have learned to overcome this and can hand off responsibilities.

What are the top tips you'd give to anyone looking to start, run and grow a business today?

  1. Know your costs and numbers. Smarter decisions can be made when you know exactly where you stand financially.
  2. Love what you do.
  3. Don't be afraid to make mistakes. Just don't repeat them.
