What's your business, and who are your customers?

Nordic Cooking is a sustainable food company that specializes in plant-based gourmet. Outside of catering, we also have our own series of plant-based gluten-free products for sale on our website.

Nordic Cooking also offers cooking classes at our beautiful event space.
It is very important for us and our concept that all clients have access to good products and knowledge about plant-based cuisine on all levels. We are excited to work with some of the best ingredients and always stay fresh in our cooking game.

Tell us about yourself

My name is Louise Rakers. I came from Denmark and moved to America in 2018. I have always been extremely interested in food and how food affects our system. When I went plant-based, I started experimenting with different ingredients, flavors, and vegetables. My mind was blown when I realized how tasty a plant-based dinner could be and how little I missed eating meat when I cooked these dishes with chickpeas, jackfruit, lentils, and tofu. I made food for friends and family, and they loved it, saying I had no idea this was plant-based!

What's your biggest accomplishment as a business owner?

As a business owner, I think the biggest accomplishment is being able to prepare flavorful and stunning food for our clients that they love. Also, it is important to me to be involved with the community and to build strong collaborations between business owners within the industry. Being able to inspire others and hopefully get them to try and incorporate more plants and sustainable options within their business is the end goal and would be a huge accomplishment.

What's one of the hardest things that come with being a business owner?

Being a business owner means working a lot. There is always something to do. I think the hardest thing is setting healthy boundaries and delegating, but once that has been achieved, it is a great lifestyle with space and time for the family.

What are the top tips you'd give to anyone looking to start, run and grow a business today?

Write a business plan, find people to learn from in your industry, and research the market.

Is there anything else you'd like to share?

Never give up even when the road seems long or hard; just keep going. Keep the focus on the small steps, celebrate them, and then you will reach the bigger picture in no time.
