Award-Winning, Handmade Cheese - Mozzarella Company

What's your business, and who are your customers?

Mozzarella Company is an artisanal cheese factory that I founded in 1982. We make a variety of cheeses that are sold directly to consumers as well as to restaurants and hotels, and stores. We began but making one cheese, fresh mozzarella, and we have grown to make over 30 different handmade cheeses. Our cheeses have been recognized for their quality and taste for years, and we were just named as one of the top 50 cheese factories in the USA by Food & Wine Magazine.

Tell us about yourself

I lived in Italy as a student in the late 60s. I fell in love with everything Italian .. the architecture, the light, the colors, the food, wine, etc. Later in the early 80s, I decided that I wanted to have a business that focused on Italy and food … and that is when I created Mozzarella Company so that I could have the fresh mozzarella in Dallas that I had loved in Italy. I have enjoyed being part of the food world and all the wonderful friends I have made. And I love the cheeses that we make.

What's your biggest accomplishment as a business owner?

I am very proud to have founded a business that has flourished for 40 years. I am thrilled when people like my cheeses and know about our company's success.

What's one of the hardest things that come with being a business owner?

Patience.

What are the top tips you'd give to anyone looking to start, run and grow a business today?

  1. You can never know ahead of time how much time and energy it will require.
  2. Be creative and think outside the box.
  3. Love what you do, and it will never seem like work.

Is there anything else you'd like to share?

My cheese factory led me to write two cookbooks: The Cheese Lover's Cookbook and Guide and Cheese, Glorious Cheese! And the cookbooks led me to teach cooking classes in the US and in Europe … and now I have a travel business that takes food lovers on culinary trips to Italy and beyond. And my friend Chef Stephan Pyles and I take travelers on cruises, too.
