What's your business, and who are your customers?

We are the first stand-up Bar Italiano in North America. In Italy, a Bar is where people take a break from the day. Our customers are people that need a break from their day, a sip of coffee, or an aperitivo as a moment of reflection or for a quick chat.

Tell us about yourself

I have been in the hospitality industry for over twenty years. My strength and passion are to make Italian-themed establishments as authentic as possible, leaving out the North-Americanization of the last 100 years. I live and breathe contemporary Italian culture, mainly gastronomical. I love what I do. I love the look on someone's face when they experience something in my establishment that they have only seen on a wonderful trip to Italy.

What's your biggest accomplishment as a business owner?

When you first open a retail space. Many customers feel that they need to tell you ''what you should do!'' Today, customers focus on what we are doing rather than what we should be doing.

What's one of the hardest things that come with being a business owner?

The hardest things are those that are beyond your control. Some examples are closing shop because of a power outage, not opening on time, or not serving what you like because of government bureaucracy.

What are the top tips you'd give to anyone looking to start, run and grow a business today?

  1. Decide what you want to do and stick to the macro-plan.
  2. Make sure you understand business basics like break-even analysis and cash flow.
  3. Make sure your concept has the money-making capacity to reach your goals. For example: If my Bar needed to sell 20 coffees an hour to be successful, I need to make sure I can make 20 coffees in an hour. You would not believe how many times I have encountered business models that do not know this.

Write a mission statement and make all decisions respecting your mission statement.
